Blueberry Turkey Salad
Containing cancer-fighting ingredients and low-fat protein, blueberry turkey salad makes a healthy and delicious meal. Served on top of fresh greens, there is plenty of fibre too. And if you already have leftover turkey, it’s quick and easy too. You’ll need: -4 cups torn Romaine leaves -1 cup mesclun mix greens -1 ½ cups chopped cooked turkey (or chicken) -1 cup fresh blueberries -½ cup crumbled feta -9 walnut halves, broken up a bit -2 tbsp apple cider vinegar -2 tbsp honey -2 tbsp olive oil -salt and freshly ground black pepper Combine greens, turkey, blueberries, feta and walnuts in a large salad bowl. Whisk vinegar, honey, olive oil and seasonings together. Pour over salad and toss. Serves 4.
