Easy Burritos

These easy burritos can be a real lifesaver when you need a quick, healthy meal for lunch or dinner. With simple ingredients you will probably already have in stock, it’s a handy recipe to have.

You’ll need:

-1 can of tuna

-1 tbsp olive oil

-2 shallots, minced

-2 cloves of garlic, minced

-8 cremini mushrooms, thinly sliced

-1 cup fresh spinach, chopped

-½ cup grated sharp cheddar

-4 flour tortillas

Sauce: mix 2 tbsp low-fat mayo with 1 tbsp shrimp sauce (or 1 tbsp tomato paste or ketchup mixed with ½ tsp prepared horseradish), salt, pepper and a pinch of cayenne

Sauté the garlic and shallots in olive oil for one minute. Add the sliced mushrooms and cook until the moisture has been released and evaporated…about 5 minutes on medium heat. Let cool.

Meanwhile, mix the sauce and toss with tuna, spinach, cheese and sauté ingredients.

Lay the tortillas on the counter and place ¼ of the filling in each one. Fold opposite sides in toward the middle and overlap slightly, creating a square.

Place the tortillas smooth side up on a lightly oiled baking tray and bake at 325° for about 12 minutes.

Burritos make a great lunch for 4. Or for dinner add a side salad.
