Energy bar recipes
For a quick and healthy snack, energy bars are hard to beat. Unfortunately, many commercial products also contain ingredients you really don’t want to eat. Try these energy bar recipes and bake your own! You can control the sugar and fat content as well as select favorite fruit and nuts. Fiberlicious peanut butter barsIn a large bowl combine and set aside: -3 cups quick rolled oats -1 cup whole grain flour -1 cup shredded coconut -½ cup dried fruit (raisins or cranberries are good) -¼ cup ground flax -1 cup sunflower seeds -½ cup chopped walnuts -½ cup carob or butterscotch chips In a saucepan mix: -½ cup molasses -½ cup canola oil -½ cup brown sugar -½ cup crunchy peanut butter Stirring constantly, cook over med-low heat until dissolved. In a small bowl combine: -1 tbsp milk -1 tsp vanilla -½ tsp baking soda Add this to the wet mixture in the saucepan, stir for a minute or two and remove from heat. Pour this over the oat mixture and toss until the dry ingredients are moistened.Press into a rectangular baking dish and bake at 275ºF for 20 to 25 minutes.Cool, slice and store in the refrigerator.
Spicy ginger and date bars Pour ½ cup boiling water into a small bowl and add: -1 cup chopped dates -⅓ cup chopped candied ginger Let stand for 10 minutes. In another bowl combine: -1 cup whole grain flour -1 ½ tsp baking powder -¾ tsp cinnamon -¼ tsp nutmeg -¼ tsp allspice In yet another (large) bowl beat together: -⅓ cup of olive oil, and -½ cup brown sugar Stir in: -1 egg, lightly beaten -½ tsp vanilla -the date mixture, with water Add dry ingredients and mix until just combined.Spoon into a greased 8-inch baking pan, bake at 350ºF for 25 minutes.Cool and cut into 25 bars.
