Healthy meatloaf recipe
I still love old fashioned meatloaf. One of the reasons is that I can cook once and eat numerous meals (remember: that’s one of the secrets of maintaining a healthy diet.) But I wanted to make something a little healthier and eat less animal fat. One of the healthiest meats available is poultry and I use lots of ground chicken and turkey. Low in fat, high in protein and flavor. In my healthy meatloaf recipe I mix beef and chicken, but turkey would work as well. In any case, try to get organic. In a large bowl mix: - 1 lb. extra lean ground beef or sirloin - 1 lb. ground chicken - ½ cup bread crumbs - ¼ cup ground flaxseed In a separate bowl: - beat 1 egg - add 1 tsp tamari (soy sauce) - a dash of hot sauce - ¼ cup ketchup - ½ tsp dried thyme - ½ tsp dried basil - 1 tsp dried parsley - 1 tsp lemon juice - lots of black pepper Make a well in the meat mixture and pour the egg mix into that. Combine with your hands and either press into a well-oiled loaf pan or form into a loaf shape and bake in a pie plate or casserole dish. Bake at 350ºF for 60 minutes or until internal temperature reaches 170ºF. Serve with a yam/potato mash and something green like peas, spinach or broccoli.
