Lemon Chicken

Lemon lovers unite around Lemon Chicken. This is extremely simple to prepare and absolutely delicious. Double the recipe and plan on leftovers…this chicken is wonderful cold.

You can use boneless, skinless chicken thighs or boneless breasts cut into broad strips.

You’ll need:

-2 tbsp olive oil

-1 lemon cut into 6 or 8 wedges

-fresh ginger cut into 6 or 8 thin slices

-8 chicken thighs, boneless and skinless

-2 tbsp rice cooking wine

-2 tbsp tamari

-2 tbsp honey

To start, in a covered frying pan, sauté lemon wedges and ginger in olive oil on medium for about 5 minutes. Remove and save.

Add the chicken and cook 4 minutes on each side. Mix the rice wine, tamari and honey and add to pan. Return the lemons and ginger to the pan, cover and simmer for 7 – 10 minutes or until the chicken is cooked through.

Serve with cooked grains (rice or couscous would be nice) and your favorite steamed greens.

Serves 4.
