Mediterranean Spread

I love to make this Mediterranean spread on a Friday and have it handy for quick and healthy snacks over the weekend. And it’s wonderful to have around if you are going to be entertaining. You can also use this as part of a healthy snack at work with some chopped veggies.

You’ll need :

-½ cup well-drained yoghurt cheese

-½ cup feta cheese, crumbled

-4 tbsp finely chopped green olives with pimento

-2 tbsp finely chopped fresh basil

-2 tbsp finely chopped fresh parsley

-2 green onions, finely sliced (green part only)

-3 tsp lemon juice

Mix all ingredients together in a large bowl. Makes about 1 ½ cups and can be refrigerated for 3-5 days.
