Quick Curried Chicken

This recipe for quick curried chicken proves how easy healthy home cooking can be. Instead of an expensive and chemical-laden jar of sauce, this recipe combines a few common spices with some yoghurt to create a wonderful, mild curry marinade for chicken.

It can be mixed up in the morning and left to marinate all day, ready for a quick grilling at dinner time. If you wish, you can substitute boneless turkey for chicken.

You’ll need

-4 boneless skinless chicken breasts

-1 cup plain low-fat yoghurt

-juice of two lemons

-1 tsp curry powder

-1 tsp cumin

-˝ tsp garam masala

-pinch of salt

Wash chicken breasts and make shallow cuts across them. Combine all other ingredients in a bowl and add the chicken, tossing to coat. Cover and allow to marinate in the fridge for at least one hour or up to 8.

Barbeque (or broil) the chicken for 5 minutes each side.

Serves 4 with rice and side salad or steamed vegetables.
