Turkey Sausage Skillet Dinner
This super-easy Turkey Sausage Skillet Dinner is real comfort food. Made in one pan, it tastes decadent but is low in fat and high in nutrition. It also makes a great meal for camping out. You’ll need: -2 tbsp olive oil -4-6 turkey sausages, breakfast size – I suggest turkey as they are so low in fat, but beef or pork can be used -1 onion, sliced into rings -2 cloves of garlic, minced -1 uncooked baking potato, cubed -12 oz broth: use a low-sodium veggie cube, or beer (really, it’s delicious) -¼ cup of ketchup (organic if possible) -1 tsp dried thyme -3 tbsp chopped fresh parsley -a few shakes of cayenne or some hot sauce -½ tsp tamari (soy sauce) -freshly ground pepper, to taste Method Add 1 tbsp of olive oil to a large, deep skillet and brown the sausages on all sides. Then, if cooking with beef or pork sausage, remove from pan and clean away excess fat. Add the rest of the olive oil and sauté the onion and garlic. After the onion has softened, add the cubed potato to the pan and toss with the onions and oil. Let that cook for about 2 minutes. Return the sausages to the pan, arranging along the perimeter in a ring. Meanwhile prepare the broth of chosen liquid, ketchup and seasonings. Pour the broth into the pan, making sure that the liquid nearly covers the potato. Cover and cook on low, stirring occasionally, until the potatoes are tender. You may need to add more broth. But, if there is too much broth, remove the cover just before the potatoes are done. This will allow the excess moisture to evaporate and you will find yourself with a lovely gravy. Serve with peas, green beans or a spinach salad. Serves 2 or 3.
