Turkey Sausage Stir Fry
I call this Turkey Sausage Stir Fry but at the end you will find some suggestions that you can use the modify this recipe to your taste. In a large skillet, add some olive oil and cook 2 spicy turkey sausages While they are cooking select some veggies. Try: ˝ a Spanish onion, cut into strips 2 cloves of garlic, minced 1 stalk celery, sliced on the diagonal 1 sweet red pepper, cut into short strips 8 cremini mushrooms, quartered Some broccoli or cauliflower, broken into florets When the turkey sausages are cooked, remove them to a plate and let them cool. Turkey is very low in fat so there is no need to remove excess. In fact, you may want to add a bit more olive oil at this point. Add the veggies, the longest cooking ones first, and stir fry over med-low heat, covered. This will take about 10 minutes, depending on which vegetables you have chosen and how well cooked you like them to be. Once the water is released from the vegetables and the pot is deglazed, just remove the lid to ensure the dish doesn’t become too watery. That will also give the juices a chance to stick to your ingredients. Add your herbs and spices at this point. Season according to your own taste. You might try: -˝ tsp thyme -˝ tsp parsley -˝ tsp oregano -˝ tsp basil (all dried) -freshly ground pepper to taste While that is cooking, slice the turkey sausages on the diagonal, about 1/2" thick. Return to the pan once the veggies are cooked. Grate the cheese of your choice and toss with the vegetable mixture. With the ingredients mentioned here and seasoned in this fashion, a squirt or two of lemon will really enhance the flavors. Serve the turkey sausage stir fry with long-grain or basmati rice, which you can begin at the time you start cooking the sausages. I often cook more rice than I plan on eating. It will last for a week in the fridge. Just microwave when needed or sprinkle some right into the stir fry when the vegetables are nearly done. Or, you can toss this with cooked penne or rotini. In that case you will want to use a bit more olive oil, extra seasonings and a little more cheese.
This shouldn’t take more than 30 minutes to prepare. And even less time is needed if the meat and/or rice is cooked ahead of time. Other ideas to try: -instead of turkey sausage use strips of chicken -or use beef; sauté a strip loin steak to your satisfaction and remove to a plate. Stir fry your favorite selection of veggies and include some cherry tomatoes, whole. Cook these just until they start to shrivel and they’ll be incredibly sweet and juicy. Slice the steak across the grain and add to the veggies along with any juices from the meat. Season as above. -try pork tenderloin and deglaze the pan with a bit of apple juice just before you sauté the vegetables. Omit the cheese. Season with thyme, pepper and celery seed. -marinate a piece of Tilapia in 1 tbsp olive oil, 1 tbsp lemon juice, 1 tsp of tamari (soy sauce) minced garlic, dash of cayenne and 1 tsp grated ginger. After an hour or so, pour the marinade into a sauté pan and bring to a boil. Reduce the heat, and add a bit more olive oil if required. Sauté some chopped shallots, strips of sweet red pepper and some broccoli florets. At the same time, make a space in the middle and cook the Tilapia until it starts to flake, about 10 minutes, turning once. Give this dish a healthy squeeze of lemon just before serving. This marinade is nice with chicken too.
